the tamales are very simple to make, just 3 ingredients.

The soup was separate. I boil some veggies, add some leftovers and then add canned soup.

But it needs a vegetable soup to balance it. I make canned soup with extra veggies. Or Bear Creek soup, whatever. As long as it has plenty of veggies.

Last night was spaghetti and Greek salad. I was planning to make potato soup for the weekend, but I have so many leftovers that need eaten so we are going to go with those instead.

I made Parmesan tilapia, roasted broccoli and garlic butter mashed potatoes last night. It was so yummy with all the garlic in everything!

When I have a lot left over, I like to freeze it for a future easy meal. I plan it on my calendar for a week or 2 away and include info, like, "stirfry in freezer large glass rectangle top shelf." I set a notification for the day before so I remember to thaw it.
