A paleo-coffee recipe - YUM!

I've been eating paleo an found an amazing, very satisfying coffee drink.

1 cup of brewed coffee
1 tbs coconut oil
1 tsp unsalted butter
1 tsp vanilla

Put in blender for 20 seconds or until frothy.

Enjoy!

I told my DH about this yesterday. He's a barista, and they're always looking for new specials at work. I suggested this as a "low carb" drink for the New Year's resolution crowd. He's going to experiment with it and see what he can create.

I'll update if he figures out anything good. Because of the how the shop works, it will probably be sugar-free vanilla syrup and only one kind of fat (I think butter would be easiest), so not strictly paleo. I'm not sure many people eat strict paleo around here.
