Foul Moudammas (Middle Eastern Fava Bean Dip)
I'm not sure where to put this, so feel free to move it
Foul Moudammas 1 pound fava beans (I prefer small ones, not broad ones, though either will work) 4 gloves garlic Juice of 1.5 lemons 3/4 teaspoon cumin 3/4 teaspoon crushed red pepper 1.5 teaspoon salt 1/2 cup bean water 1/3 cup good quality olive oil Sort & soak beans overnight in a crockpot. Drain, add water, and cook on low for at least 8 hours. When fully cooked, separate the beans & the water, but save the water! Put beans and all other above ingredients in a food processor and puree until done. Served warm or at room temperature with tomatoes on top and drizzled with olive oil. Traditionally, you would eat this with pita bread. Since I am wheat-free, I generally plop it on some rice. Last night, I had it on kasha with ground beef (spiced with salt, cinnamon, all spice and chili powder).

Mmmm, sounds yummy, I'll have to wait til dd isn't bf anymore. I learned the hard way after eating nearly half a container of hummus -- chickpeas are beans, chickpeas are beans, chickpeas are beans!!! That was a very fussy night!!!

We eat that, but we don't crush the fava beans, we eat them whole, but dh is Syrian, not Egyptian...At least I think Egyptians eat their foul moudammas that way. We add crushed garlic, tomatoes, fresh parsley, lemon juice and tahini to whole boiled fava beans. Around Ramadan, mil would boil a lot of fava beans and everyone was eating them like one would eat chips or peanuts or something, like a snack with a mix of cumin, lemon powder, and salt to dip them in. You can do the same thing with boiled chickpeas.
