I didn't even notice this forum until it showed up in new posts! I just finished Dr. Fuhrman's book and I really 'get' why eating a mostly vegan diet is a prudent idea for health. He has some delicious recipes in his book and on his site: http://www.drfuhrman.com/library/recipes.aspx

Not-Roasted Veggies
These are SO amazing. I could (and might ) eat them all. day. long. Cut veggies into chunks. My favorites are mushrooms, carrots, red pepper, mushrooms, onion, mushroom & zucchini. Did I mention mushrooms? Toss with a bit of olive oil, a couple cloves of pressed garlic, fresh ginger, juice of one lemon, a splash of sesame oil & a great big squirt of Bragg's Aminos. Dehydrate at 105 degrees for several hours.

I can't believe I haven't posted The Blender Girl's site. Not everything is raw vegan, but she's got a super cool searchable feature by clicking icons so it's easy to narrow down what you're looking for. I really like her Fiesta Verde Soup, but she has lots of good ones.
