Re: HEALTHY Muffin Recipes
My nut butter muffins freeze really well.
1 cup peanut butter 2 eggs 1/4 cup sugar or other sweetener 1 tablespoon vinegar 1/2 teaspoon baking soda I add brown rice protein powder and chocolate chips (1/4 cup of each), as well as any other random things I have on hand (oats, oat bran, chia seeds, hemp seeds, flax seed meal). You just need to add water if you add mix-ins. Bake at 350 degrees F about 15 minutes, maybe a little less.

Re: HEALTHY Muffin Recipes
No flour! I had oats and oat bran, but you don't need to.

Are good! I have used einkorn and also regular wheat flour. personally, we think einkorn gives a softer fluffier texture, but either worked well for me. ---------- Post added at 08:46 PM ---------- Previous post was at 08:45 PM ---------- You're welcome! |

Re: HEALTHY Muffin Recipes
You can buy frozen pureed squash. Sometimes I can find that easier than canned, esp. around Thanksgiving. I've bought the canned in the same aisle as pie filling years ago, but couldn't find it last time I looked.
