Sausages with Onions and Celery (cut on the bias to mimic the shape of peppers) - just takes a few spices and maybe a little balsamic or some red wine. Add a little jalapeno if you like spice. You could even finish with some cheese on top. (I like black olives in mine, too. Oil-cured if you have them.) If you don't have bread/rolls you can serve over grits or polenta.

If you crumble the sausages, they work well for Eggroll in a Bowl. Just add cooked rice and whatever frozen veggies you have and you've got a one-dish meal.

You could also do a riff on Red Beans and Rice. With the Italian Sausage, I'd be tempted to use cannelini beans or another white bean. You'd need onion and garlic, some thyme, and a can of tomatoes.

Minestrone Soup - it sounds like you've got everything you need.

I have Cheesy Chicken in the crockpot and broccoli ready to steam. It's super-simple here tonight.

I ended up making dirty rice. I didn't have green pepper but I had one zucchini left so used it instead. I think Minestrone would have been really good though. Next time!

With fall semester starting, I’m making a bunch of freezer meals again. I prepare double recipes, cook half and freeze the other half. This week I’m making THM Chicken Florentine, Chicken Bacon Ranch Pasta, and Taco Chili.

Last night we had beef stroganoff, green beans, and cucumbers and onion in vinegar. Tonight I'm planning leftover bbq chicken from the freezer, cheesy grits, arugula and spinach salad.

Which chicken bake did you get from Costco? I’ve been looking at their pre-made meals to use on busy days.

This trip I got the ones in their food court.

Premade meals we enjoy are the orange chicken, potstickers, gf breakfast sandwiches and hot roasted chicken. We are a dairy light household so a lot of the premade meals are off limits for us. Lots of them look good though.

Tuna melts with IP lemon-garlic potato salad and garlicky broccoli.

(Littlest is eating a churro from the Costco food court for dessert.)
