May dinners....better late than never!
So this month I've been trying to meal plan more. I'd love to do a month at a time but so far its just been a few days at a time
Last night was pan friend chicken with fresh veggies. Tonight was "get your own" as we had DS #1's university graduation today. Tomorrow is slow cooked chicken and bacon risotto (its coming into winter here in Australia so I'm loving using my slow cooker again!

Tonight will be our first dinnerly meal. I don't know which ones. The kdis noticed there were macroons and they want the one that goes with those. So Ill see.

Thanks for starting this thread! I was looking for the May thread just yesterday and thought it was me just not being able to find it.
We had Tacos tonight. Yesterday I had a small Pork Loin I needed to use so I put it in the IP with a homemade barbecue sauce. Tomorrow it's going to be hot, so I've got sausage-stuffed mini sweet peppers going into the Crock Pot.

I made coconut chicken curry last night.
I should start thinking about tonight's dinner. Something with chicken breast because that's what is in the fridge.

The dinnerly Asian Noodle dish tasted fresh but quite bland. Fingers crossed the next one is better. Im trying it tonight.

I made this Keto Green bean and hamburger casserole I found on pinterest.

I skipped the salt in the recipe because I don't like salty food and used soy sauce instead of aminos because that's what I had. I will probably half the soy sauce next time because it still seemed a little to salty for me but dh said it was perfect for him. I think it would have been good with some onion added to as well so maybe next time. |

Last night we had low carb enchilada casserole. I just mix a bag of riced cauliflower, chopped cilantro and green onion, cumin, garlic powder, (All of these are eyeball amounts. If I had to guess I would say a teaspoon of cumin and 1/2 tsp of garlic powder) and a cup or two of shredded chicken. Then top with shredded cheese and bake for 30 minutes at 350. Then I pour canned enchilada sauce over it when I serve it. This probably makes enough for three since dh and I eat it and usually have some left over.

Tonight? Meatball Casserole and green beans, plus mashed potatoes for Littlest to go with her plain, plain meatballs.
Last night had Salmon cakes with a salad and FIL dropped off some of his clam chowder. Tomorrow is Pizza Night.
