Okay, so what is this??!

We're having a veggie tian, probably with ricotta, and either lemon chicken or turkey sausages. I left the decision up to the Chicken Nuggets and they can't seem to agree.

Picadillo is a Latin American spiced meat dish usually with tomatoes and then all sorts of other things depending on region. I put Rotel, onion, and fried potatoes in mine. Spiced with chili powder, cumin, paprika, garlic, etc.

I make picadillo and put it into the equivalent of empanadas. My DH is Puerto Rican though so he calls them pastelillos. I haven’t made it in so long I forgot about it. Adding to my meal plan!

It's just vegetables layered and baked like a casserole. I found a recipe years ago in the Beans and Rice volume of an old(ish) set of Williams Sonoma cookbooks. This particular recipe has eggplant and adzuki beans topped with tomatoes and parmesan cheese and baked in the oven. I left out the beans this time, added zucchini, and topped it with ricotta cheese. Zucchini or yellow squash (especially in the summer) work really well. When we have big, beautiful tomatoes from the garden, I layer it like this one.

Stacked chicken enchiladas, Mexican rice and black beans. There was supposed to also be roasted squash but I got sucked in to helping the girls deal with hand-me-downs and didn't get it made.

How is this different from regular chicken enchiladas? Do you use a recipe?

The only difference is instead of rolling up the enchiladas you later it all in a pan like lasagna. The only time I have gotten rolling torteas to work and not have the tortias break apart, was when they were freshly made. So I stated layering them in a casirol.

I'm glad I didn't mention giambott (or ciambotta), then! You might still be gone...

(Giambott is an Italian dish, uses pretty much the same ingredients -unless you're my cousin Frankie who totally messes with it - but a slightly different cooking method, at least the way my grandmother made it.)

This is how we make them. I've done it this way for years. So much easier. I just call it enchilada casserole. I like stacked enchiladas too.

I have no idea on dinner tonight. Supposed to be wicked hot here for the foreseeable future. I am not good with cool meals on hot days. Gotta make a plan. Suggestions welcome.
