Today was so busy, worked a half day, had to take my son to freshman registration, had to meet with contractor, do an errand, dd needs to be back to soccer try outs at 5:15 and ds at 5:45. I was going to do a meal at 3pm but now that time has come and gone.

Tonight is Chicken Bacon Ranch Baked Penne. It’s probably not the healthiest but it’s really yummy and quick. I make my own ranch, use a rotisserie chicken, and low carb penne. We get two meals out of it.

I am making meatloaf tonight. I don't like it, and I dislike making it even more, but DH loves it, so I am doing it to bless him. I don't have any other meat than beef, though, so it will be very heavy.

We had leftovers yesterday.
Today we are are having sheet pan meatloaf with roasted redskin potatoes and asparagus. Also french rolls and honey dew melon for dessert.

No plans yet for rest of week. I'll get groceries tomorrow and need to check weekly sale ads to plan.

We are supposed to go see Shakespeare in a Park tonight (so, outdoor picnic fare), but the weather forecast is for rain. Some of our friends that we were meeting there have already dropped out. I haven't actually made anything, though so I can change course.

Monday was Venison Stroganoff (with curry and horseradish) with mashed potatoes and roasted asparagus

Yesterday was French Onion Chicken with mashed potatoes, roasted carrots, and salad

It was nice and creamy and cheesy -- all good things in the eyes of my children. They liked it so I'll keep the recipe. Plus it was easy to make and I could add any veggies I had on hand.
