It's a copycat of Noodles & Company's pasta fresca: a vinaigrette-type sauce (I use apple juice, apple cider vinegar, olive oil, minced garlic, salt, pepper), pasta, chicken, and chunks of onion, tomato, broccoli. Sometimes fresh spinach leaves are nice in it too. I cook the chicken in the sauce. Meanwhile I cook veg separately (just till done). Cook pasta, remove cooked chicken and add cornstarch slurry to sauce. Stick sauce back in to heat/thicken while cutting chicken into chunks. Toss all components together.

Yesterday one of my kids requested taco casserole--I'd forgotten about that. It was nice to be given the idea and just make it.
Today was filled with obligations well into the evening, so I just pulled out a frozen stew and garlic bread; heated both and served with salad. |

Kinda basic so far this week.
Twice we had baked salmon with boiled potatoes and frozen veggies. One night Thai red chicken curry. Brunswick Stew from the freezer last night. Thinking pasta tonight

Last night was basil Parmesan meatballs from Costco. Tonight is probably garlic butter shrimp and mushrooms. Might make some pasta to go with it.

Well, shoot, a lot of things in my freezer were older than I was comfortable with and I tossed them. I would like to figure out how to stay on top of that better.
My menu for next week will use up the ham in the freezer. I still have chicken tenders, cubed chicken and rotisserie chicken that is still good. Monday - swedish meatballs (my Swedish Grandma's recipe), creamy noodles, beets Tuesday - honey mustard chicken, baked sweet potatoes, zucchini Wednesday - stroganoff and green beans Thursday - crockpot beef, baked potatoes, carrots Friday - spaghetti and meatballs, spinach salad Weekend - ham, cheesy crockpot potato casserole, corn

I forgot to post this week's menu. I actually wrote it on my kitchen chalkboard this week (for the first time in like a year)
I'm trying to eat cruciferous vegetables daily and get more fiber, so I'm trying to make a batch of veggies and a pot of beans to add to my meals all week. This week was collard greens and black beans. Venison vegetable soup served over a grain mix Pork tenderloin, steak, fries, roasted broccoli cauliflower Green chili chicken and rice Coconut curry chicken and cauliflower rice Mustard baked fish (probably won't get to this one this week) Sunday dinner: I pulled out a frozen spaghetti casserole that needs to be eaten and I'll add fresh broccoli and stewed Tuscan white beans (will double this recipe so I have my beans for next week) Sent from my Pixel 6 using Tapatalk

Michelle, that's great about your daughter! Tonight was bean soup, with the suggestion that people make their own grilled cheese sandwich and have a salad with it. (I don't think anyone had salad, though. oh well. I tried.) |

Today I cooked skirt steak slowly in a low-temp oven during the afternoon, then roasted veg, sauteed cabbage, made rice and served the meat with tortillas for people to assemble their own burritos. The meat turned out very tender, made people happy.

Well, I had planned to make honey mustard chicken tenders today...only to discover when I opened the chicken that it smelled off. Same when I then opened my other package of chicken. (Both had been on sale at the store, bought on the last day of their "good by" date, then I'd immediately frozen them. I should've known better than to take that chance with chicken...now instead of a deal, I'm out $20.)
So very last minute I made meatballs, stretching a pound of pork. They actually turned out quite tasty, to my relief. |

I didn’t get to my honey mustard chicken today either because we had way too many meatballs leftover from last night plus I didn’t get the chicken out of the freezer. Maybe next week.

Last night I made Turkey chili. Why don't I make chili more? I love it and it was such comfort food I needed!
Tonight I'm making Coconut Chicken Salad with Warm Honey Mustard Vinaigrette.
