I have a pound of chicken, what should I do with it?
Preferably casserole, one pot kind of meal. I totally need some inspiration. It has been a busy week and I am not feeling great so nothing sounds good. Help me.

Brown it in a dutch oven with olive oil and garlic, add 1 cup brown rice 3.5 cups of chicken broth and simmer for 45 minutes, steam broccoli on top add some cheese and serve.
Bake it with a cream of whatever soup and top with stuffing crumbs.

We like these:
Chicken curry but just brown up the chicken and toss it in rather than using a whole chicken like they recommend Chicken tortilla soup Stir fry it with some veggies and serve it with rice (my kids adore this)

I'd brown it with garlic, onion, ginger, diced carrot (and other veggies of your choosing) and add some cooled cooked rice and soy sauce to it for a simple "fried rice" type dish.

those all sound good. I am going to try the chicken curry because I have all the ingredients, but save those others for another day
