Lentil soup recipes?
I have some organic red lentils crying out to be put into soup. I used to make a lovely potato soup with them, but avoid that many carbs now. So, I need some ideas.
I have various veggies, onions, and some apple-chicken sausage I could add. Tell me what you would make (and how you would make it). Thanks!

Oh, I love red lentils. I made curried red lentil soup almst weekly. It's my favorite, and G will sometimes eat it. Here's a guide:
Chop up an onion and a few carrots, saute in oil until soft add curry powder (really to taste, but at least 1 tsp) (can also add tumeric, ginger, cumin, any typical curry spices, or garam masala), let the spices get fragrant add lentils (I usually use 1.5-2 cups),saute for a minute or so add water/chicken stock, 6 cups or enough to cover the lentils plus a little extra simmer until lentils are done (I usually blend with a stick blender, but it's not necessary) when the soup's basically done, add some frozen chopped spinach add water as necessary to maintain your preferred thickness. I could and practically do eat this for lunch every day.

This is my favorite lentil soup recipe. It's from the book Veganomicon. It has converted several non-lentil fans to enjoy them every once in a while.
French Lentil Soup with Tarragon and Thyme Ingredients 1 T olive oil 1 large yellow onion, diced 1 large carrot, peeled and diced 5 plum tomatoes, seeded and diced (I didn't seed them and the soup still came out great 4 cloves garlic, minced 2 t dried tarragon 1 t dried thyme 1 t paprika 6 cups water or vegetable broth 2 cups lentils 2 bay leaves 1 1/2 t salt several pinches of black pepper Preheat a large soup pot over medium heat. Saute the onion and carrots for about 10 minutes, until the onions have browned a bit. Add the garlic, tarragon, thyme, and paprika, and saute for 2 more minutes. Add the tomatoes and a little splash of water if necessary, and stir to deglaze the pot. Cover and cook for 5 minutes. Add the water/broth, lentils, bay leaves, salt and pepper, then cover and bring to a boil. Once the soup is boiling, lower the heat to a simmer and cook, covered, for about 45 minutes, or until the lentils are tender. If the soup looks too thin, uncover and simmer for a couple more minutes. If it looks too thick, add a little more water. Serve with good, crusty bread.

2 C cubed ham
2 C lentils, washed thoroughly 5 C hot water 1 stalk celery, chopped 1 med onion, chopped 1 bay leaf 1/8 tsp garlic powder 2 tsp salt 1/8 tsp pepper Combine all ingredients and simmer for 2 hours. Remove bay leaf. Puree in a food processor or blender. This is a great meal in the winter with sandwiches or salads. Makes 2 quarts. ~~~~~~~~~~~~~~ this was dd1's first food she tried to dump my bowl and got it all over her fingers and had her fingers in her mouth going back for more before i could blink....

I have a really nice lentil soup recipe with molasses!! YUMMY!!!
Molasses Lentil Soup 2 tsp canola oil 1 onion, chopped, 2 cups red lentils 2 red potatoes, diced 2 carrots, diced 8 cups chicken stock 1 cup frozen corn 1 tbsp dried oregano 2 cups tomato juice or v-8 juice 1/4 cup lemon juice 3 tbsp molasses salt and pepper to taste In very large pot, heat oil. Add onion; cook for about 4 minutes to soften. Stir red lentils, potatoes and carrots into onions. Add chicken stock and bring to boil. Reduce heat and simmer 15 minutes. Add corn, oregano, tomato juice, lemon juice if desired and molasses. Bring to simmer, cover and simmer 5 minutes. Add salt and pepper. (Refrigerate up to 4 days or freeze up to 6 weeks). Serve extra molasses at the table to drizzle over soup. That's the best part!!

I can't wait to try many of these ideas!
What I ended up doing was making a chicken stock from a chicken I had baked a few days before. (ok, dh made the chicken stock, actually). I then put in celery, carrots, fresh tomato, onion, red kale, bay leaf, salt, pepper, garlic (raw and powdered), butter and oil, the chicken/apple sausage, quinoa and the red lentils. num num num We just finished the pot last night, and I am so sad it is gone. It was delicious!!!
