It gets mushy and tastes awful or in the case of the fruit and salsa it tastes like alcohol.

Ok, so I made sauerkraut. I've never eaten sauerkraut before, so how do I know if it's done? Also, it turns out that DH thinks it's awful, and DS is afraid of it. Can I freeze portions of it and retain the probiotic properties? There's way more than I'll eat in a month, I'm sure.
Oh, and suggestions for meals that you would put sauerkraut with would be helpful...

I have some pickles that were out for 3 weeks. A few jars don't smell good. They still taste very salty. Should we eat them or throw them out?

My poor ferments. My house is too cold and they are taking for-e-ver!!!!! I have had salsa going for 2 weeks!

Maybe try adding some to soup then? Also on sandwiches would be good, I mix it in when I make tuna sandwiches.
If you are into ethnic foods you could put them in a Pierogi.

My DH has added kraut to sauteed vegetables (carrots, sweet turnips, celery, and swiss chard ) and diced chicken on multiple occasions and it's always very good! It melds well with the other flavors (and you don't have to add extra salt ) so it's good esp. if you're not a fan of the kraut flavor (which I am not while pregnant ).

We just had tuna salad yesterday, and I poured a little dilly juice on it. I didn't even think about the kraut!
