I made bread yesterday. So we are doing blt and sandwiches.

I also cooked extra chicken and potatoes this week. So we can eat chicken salid and potato salid.

I am planning on still doing things like cooking pasta for pasta salid on the stove top because gluten free pasta doesnt do well with going in the fridge and then holding together. If we could eat normal pasta I would have pre cooked it as well.


This afternoon before it gets too hot I am going to boil eggs for deviled eggs as a snack. And and I just realized I need to roast the walnuts to go in the chicken salid today as well.

Potato salad (steam the potatoes in the IP, then toss with lemon juice, lots of garlic, parsley and some EVOO. This dressing is also excellent on garbanzo or cannelini beans.)

Honestly, I use the Instant Pot or Crock Pot when it gets really hot, or go to Costco and get rotisserie chickens. Anything to avoid turning on the oven!

Oh this happened to me the other day! I made ds cook dinner the next night since he was supposed to put the food away! But I was cranky I didn't get my leftovers!

Last night the Birthday Girl asked for Lemon Chicken Cutlets, Caprese Salad with Pesto (I was a Bad Mom and had her go pick her own basil ), and a Watermelon Shark in lieu of a cake.

Tonight we're having IP Beef Chili.

My Instant Pots have been getting a workout this week! We got a couple of those silicone egg bite pans and have used them to make not just egg bites, but cheesecake bites and pancake balls, both regular and GF. I can stack two pans in an 8qt IP; I'm wondering if I can get three?

I tried a new recipe last night - enchilada pie https://www.bbcgoodfood.com/recipes/enchilada-pie The filling was really nice, but the tortillas were soggy and not so good. I think I'd make the filling again but probably make them as normal enchiladas.

Tonight I'm being lazy - store-bought burgers and buns, probably with salad and maybe sweet potato fries.

Lastnight we had spinach salid with bisalmic grilled chicken, strawberries and greasy figs.

I enjoyed the figs no one else did.
