In my quest for healthier convenience food dinners, we tried Trader Joe's vegetable soba noodles stir fry along with a rotisserie chicken. It was super easy, but no one really liked it. The rwo items didn't pair well next to each other, and the sauce was too spicy for all the kids.
Actually, I found hot dog buns that need to be used, so it is hot dogs and baked beans and salad tonight

The kids had their traditional Day-after-Thanksgiving Pie For Breakfast this morning.
I did a little extra cooking yesterday and picked up a few pantry extras so that I could turn our traditional Thanksgiving into non-traditional meals with minimal effort. Tonight I think it will be some sort of turkey nachos or quesadillas.

Apparently DH has a plethora of egg whites left over from his Triple Chocolate Pie endeavor. He says an egg white quiche/fritatta/omelette is just begging to be made.
(What does it say about me that my first instinct was to make meringues with excess?!?)

Since this week changes in December, it also include those meals.
Today - vegan butternut squash soup in the crockpot Tomorrow - sandwich, easy, leftover soup dh and ds will travel 2 hours to a soccer game and back so will be gone most of the day so dd and I wont bother with anything but I do plan to make quinoa for salads and/or easy meal (aka iron bowls); hard boiled eggs and roasted chickpeas for food on hand for the week Monday - pasta; plus cook chicken for salads and for ds snacks for the week Rest of week: vegetarian Stir fry with rice tacos (hard shell; assemble your own) Chili (1 with meat, 1 vegetarian) curry (1 with chicken, 1 without) I have the ingredients through Monday and dh will shop for the rest of the ingredients for me Monday night when he takes ds to soccer practice followed by bball practice.

I diced the leftover turkey, added frozen mixed veggies, dumped leftover gravy and topped with mashed sweet potatoes. I dont see it going wrong.
Fingers crossed it is edible. Kind of a shepard’s pie situation. |
