Well I had a meal plan for the next two weeks based around what I still have and weekly adds and such through our local grocery and Walmart groceries... Went today to shop for the stuff. I needed. I ended up not being able to get a got 40% of my list. Nothing on it was weird their just isn't stuff. No I have to redo half of what I planned.
Dinner tonight was left over Chicken Cesar Salad and cheesecake from lunch takeout.

Im all off this week! I changed my mind. I have chicken and limes leftover from pad thai. I makes more sense for me to cook the chicken tonight than tomorrow night. So tomorrow will be the easy pasta and tonight I need a chicken-lime recipe.
ALSO, I need to pop by the grocery store for fruit and eggs and milk so thought I could grab some shrimps and do some type of lime-chicken or lime-shrimp kabobs? What veg goes on kabobs wITH lime. Like mushrooms and lime? Bell peppers. Onions. I need to find a recipe for all t his. With rice. But I wont have a lot of time to marinade. What about a lime pasta dish? With chicken optional? Ugh! HELP! And I want this to be a quick grocery run with an uncomplicated dinner not pick up a ton of ingredients from aisles. HELP!

Ground turkey sauteed with chopped onions, garlic and tomato, then added chopped potatoes and taco seasoning, simmer until cooked. We had burritos with that, except my dad, who had it all without the tortilla.

NOW the easy pasta - just spaghetti, jarred red sauce and side of grilled asparagus. Oh, I also impulsively got an acorn squash so need to do something with that this weekend.

We tried Ocean Perch last night. (I used almond flour in place of bread crumbs.) I threw most of it out. It wasn't the seasoning; apparently none of my family likes the perch itself. This would have been eaten had I made it with cod, haddock, or pretty much any white ocean fish, I'm sure.

Loaded baked potatoes tonight.
I made GF english muffins this afternoon and need to make baked eggs in a little bit for tomorrow morning. DD came home with sous vide egg bites from Starbuck's and they are wonderfully creamy! The first ingredient is cottage cheese, interestingly enough. Can't decide if I should try to copy those first, or use the Cook's Illustrated recipe for baked eggs; they both sound so tasty. I've got bits of different cheeses and Italian lunch meats leftover from catering a meeting, some roasted onions, and different condiments that would make tasty breakfast sandwiches. Breakfast is SOOOOO much more fun to make!
