Favorite meals for a crowd?
I’ll have a handful of hungry teens/young adults here for the the next five days. Meals should be gluten free. I’d like to balance meat-heavy meals with some that are not in order to be budget conscious.
Taco bar/taco salad is requested. What are your go-to meals for crowds? Give me any breakfast ideas you like, too. I might do overnight oats for one morning, eggs and toast, maybe a breakfast casserole...Lunches will be low key like sandwiches.

How large?
Broccoli cheddar soup (or any soup, I guess, I just like it because everyone loves it, it is filling but has no meat, and I use frozen chopped broccoli so it is easy ) I use King Arthur gluten free flour. Chili (can adjust the meat, add extra beans) Baked cheesy grits (can be served with any meal, really, not just breakfast) Baked oatmeal

Chuck wagon over rice: basically it is onion, garlic sauted, browned hamburger meat, add a large can of pork n beans and then add bar b que sauce (I make my own that is mustard based and puckers your mouth. ) serve over rice and add salad as a side with some toast or biscuits.
Quiche is good for crowds. I do 5 eggs, seasoning, add cheddar and sour cream with a little milk. I add 1/2 cup GF Bisquick so that it will make it's own crust. I often add spinach to make a veggie quiche. You can easily add meat if you wish. |

Chili - for GF sides, use tortilla chips and/or rice. I have recipes for pantry versions for chicken and beef chilis I can post if you need them.
Minestrone -(especially good with pesto! I leave out the pasta.) Spanakopita Chicken Satay curry - this stuff is so stinking delicious! And much, much easier than threading all those skewers! Easy to scale up for a crowd. Dh makes breakfast strata for crowds - eggs, cheese, sausage, maybe spinach, you can use GF bread if you have it My kids like cinnamon rolls or french toast casserole for breakfast, but I don't have good GF recipes for those. The number one request of my mom for Christmas breakfast from my siblings is always biscuits and gravy. It's do-able GF - I use cornstarch to thicken the gravy and the ATK GF biscuit recipe, but I've seen good ones posted here.

You have been given a lot of good ideas so here are a couple to help use any leftovers: Baked potato bar, the day after you serve chilli so you can use the leftover chilli; or taco soup made with taco bar and chilli leftovers.
Pasta bar with a traditional sauce with either hamburger or Italian sausage, and a cream sauce with chicken.

Thanks for all the good ideas! My nephew requested that we turn the taco salad night into Walking Tacos which was fun. They actually took a walk down the street while they ate.
We’ve had a cheesy veggie pasta dish, and a baked potato bar so far.
