Egg Roll in a bowl for Linner (lunch-dinner ds has a church event from 1-3 and dd 4-6 and our small group will meet during the 4-6 HS event and I am out of leftovers so need to make something, we will eat between church events).

Dh made sourdough Belgian waffles for breakfast today. He doubled the batch so that we'd have plenty to freeze. We made homemade pizza tonight. One of my sister's favorite pizza places makes Pizza Logs - pretty much egg rolls, made instead with pizza ingredients. We decided to try them as well. The kids LOVED them! So, definitely going on the Sunday rotation. We rolled dough super thin with the pasta roller, filled with mozzarella cheese sticks and pepperoni. Some also had a smear of sauce. We rolled them like egg rolls, brushed with EVOO and baked in a hot oven for about 18 minutes. (I think the pizza place fries them, and the kids asked me to try, but... I'm just not gonna. Maybe for somebody's birthday or other super special occasion but a regular Sunday Night? Nope!)

Last night we had Cajun shrimp, kielbasa and veggies over brown rice.
Tonight we're having penne with roasted asparagus and balsamic butter with a caesar salad and focaccia bread.

Leftovers tonight. I made 2 big lasagnas last night in anticipation of our busy week. Dd has a track meet (it's her first ever pole vault @ a meet so ) and then if she is done in time, soccer practice. Ds has soccer practice too.

Over the weekend we had chili. I used the same recipe but this chili turned out really, really yummy.
Last night we had sheet pan sausage and peppers, cheesy grits, and asparagus. Tonight I'm trying Mongolian beef recipe, rice, broccoli, ramen noodle salad minus the ramen noodles (ironic, I know).

Went out for Margaret's birthday yesterday
Tonight was minestrone and 9 grain bread Take out tomorrow not sure what yet Lentil stuffed peppers on Thursday Fish sticks and Mac n cheese on Friday Vegetarian Chili with salad and cornbread on Saturday Pork roast corn on cob and roasted potatoes on Sunday
