100% whole wheat sandwich bread
As promised. From King Arthur Flour Whole Grain Baking 2T orange juice 1 cup lukewarm water (not tap water) 4 T unsalted butter, cut into 6 pieces 3 cups whole wheat flour 3 T sugar heaping 1/2 cup dried potato flakes or 3 T potato flour 1/4 cup nonfat dry milk 1 1/4 t salt 2 1/2 t instant yeast (If active dry, measure the warm water, oj & yeast. allow to proof for a few minutes It'll be nice & bubbly) Combine all ingredients. Mix & knead until you have a soft, smooth dough. (You may need to add 1 T water.) Cover & allow to rise until doubled in bulk -- 1 - 2 hours. Lightly grease a loaf pan. Gently deflate dough and shape into a loaf. Place in the pan. Cover & let rise until it has crowned about 1 1/2 inches above the pan rim, 1.5 - 2.5 hours. Preheat oven to 350 toward the end of rise time. Bake bread for 35 minutes. Tent with foil after 15 minutes. Turn onto wire rack. Cool 30 minutes before slicing.
