March Meals
I'm having a hard time believing it's March already, but here it is!
I'm trying a new recipe tonight: Caramelized onion and blue cheese portobello mushroom burgers with fries.

That sounds yummy. I am allergic to mushrooms, but I love them.
I am making a jambalaya type dish for Fat Tuesday tonight. I listed all my dinners for the month last night. I just have to assign days to some of them.

- yesterday was shrimp pasta, today is leftovers or fend for yourself. Have run after work, followed by pick up ds at the track and bring him to soccer. Dh will pick up dd and bring her home and then she will carpool to soccer. busy busy

I made tomato soup and garlic bread tonight. It was good. Since I am gf, I put gf noodles in my soup instead of eating the bread.

We had chicken breast with mushrooms and peas served over rice. It was supposed to be quinoa but I was out.

I think frozen ravioli pasta.
Its slightly less busy - dd has track until 630 but no soccer, ds has no track but soccer and we leave at 4:50 to start picking up boys bc Im driving the carpool. So itll be eat on your own but can cook the ravioli at the time and have salads premade.

Last night we had wild caught sockeye salmon. Air fries potatoes (french fries). Roasted asparagus.
Not sure what I'll cook tonight. I should decide soon. As per the lunch question - I keep lunches simple. When they kids were younger and all home at lunch we did sandwiches, nachos, veggies and dip, leftovers from the previous dinner, things like that. Now that they're older (youngest is 13). they're either at school/work for lunch or they fend for themselves at home. I keep lots of easy make things on hand (mac and cheese, frozen chicken nuggets, taco shells and cheese for quesadillas, pasta and sauce, eggs, bread, etc.).
