Re: March Meals
My oldest works at Starbuck's. Dh thinks it's fun to go order a drink for "Prima's Dad" when she's working. He enjoys the exasperated eye rolls and clenched teeth sighs.

Re: March Meals
I made homemade shrimp stir fry with the veggies from my weekly produce basket. It had onions, green peppers, broccoli, and bok choy. I also made taziki rice to go with it.

Re: March Meals
I'm finding that I do best meal planning our dinners but ingredient prepping lunch/snacks.
So meal plans for this week (which will actually start Wednesday) Chicken and rice side vegetable probably peas Rice and bean bowls Pourable veggie pizza with salad Sausage with onion and potatoes Pork tenderloin with corn on cob Minestrone soup with bread I'll shop for top off ingredients and I'll decide the day before which meal and if any early work will be needed but otherwise I don't really prep. Lunches are different I find we too often end up with excessive processed stuff (micro pizza, ramen etc or picking up ordering in..that it doing the let's munch on this bag of Doritos why we decide... So I've been working on making sure I have some healthier stuff prepared. I can put it together for a more traditional meal or just have some smaller snack like stuff but in ways that feel more satisfying and not leaving me starving. Plus gives the kids choices. So todays prep.. Roasted and shredded some chicken Cut carrots celery and bell peppers Made hummus Made yogurt Hard boiled some eggs Made a triple berry compote Made some tuna salad Froze some grapes and bananas for snacks or smoothies Made some muffins (just from a box mix) Dinner ironically was veggie tots with Mac n cheese (just buttered gf noodles for Margaret) and some of the raw veggies I cut earlier. Prep took some work, dh had a performance so got dinner on his own. So yea I needed simple.

Re: March Meals
Impressive, mm.
I am glad you are feeling better. Just ordinary tacos for us tonight. I will just eat my fillings without a shell, and I bought a mexi-rice cauliflower rice from TJs to try, so I might cook it.

Re: March Meals
Corned beef here, too.
I normally cook it all together, but this year, I am roasting the cabbage, potatoes, and carrots while I cook the meat in the IP. We are making GF sugar cookies for dessert.

Re: March Meals
We had a nice bean chilli on Monday, but I’ve struggled for ideas the rest of the week. Actually, I’ve struggled with motivation for cooking
