Crunchy tacos for today and I meal planned and shopped but its all super easy meals. Because double sports and then ds and I leave for an out of town soccer tournament (dh and dd will stay here as dd has stuff here) so can't begin to think about anything harder than very easy.

Last night I made Butter Beans and Cornbread with broccoli.
I splurged a little for tonight and bought salmon. I'm making salmon with a mustard glaze, artichoke salad, peas, and oven fries.

Leftovers/Fend for Yourself Night. I only made Kale chips (because the kale was actually leftover from soup the other night).
A friend from the Dominican Republic made me some Pastelon, so that's what I'm having.

I'm making ramen. It'll probably end up being 4 different dishes because I've got two who want shirataki noodles, two who don't, one vegetarian who wants mushrooms, one omnivore who won't eat tofu or mushrooms and one who won't eat veggies at all.

I had allt he fixings for another corned beef n cabbage so did that. Frozen pasta. Hearty salads. Thats this week.

Tuesday was tacos Tonight was supposed to be pot roast, but I forgot to take out the roast. Maybe beef stew because it thaws quicker.

Monday was take out BBQ (brisket, beans, and potato salad) but I made the coleslaw and I sauteed some asparagus to go with it

I had some time today, and have been cooking more than usual. It's our produce basket pick up day, so I needed to get some things used up before more produce makes its way into the house.
For lunch, I made a salad, topped with cooked beets and diced apples - which were marinated in a homemade maple vinaigrette. Then I topped it off with some steak pieces. I also made some roasted asparagus - I drizzle that with avocado oil and fresh lemon juice, and then salt and pepper. I have dinner in the crockpot. It's brussels sprouts, rainbow carrots, and German sausage. I poured a little chicken broth over it for flavoring. Hopefully it's decent!

Sorry it's been a while since if been on here. Honestly I just followed the directions given on the package and it's come out perfect each time. I think it's a jenny I breast I get it in our freezer issle.

I'm excited. My garden is going really well this year, and today I challenged myself to cook a meal using only things from the garden right now. Note - we have chickens for eggs.
We had spinach and green onion frittata, salad, roasted radishes, and rhubarb crisp. I only had to add pantry staples (spices, sugar, flour, etc), plus toppings for the salad greens. But the bulk of the meal was from things I grew myself. I think I might keep up this challenge once a week. I mostly think of the garden as supplementing our sides, but I like this push to really use the garden more fully. It makes me excited to keep growing things. Plus it makes me feel like my long-time dreams of having a homestead are sort of coming true. |
