Who else relies heavily on the slow cooker for summer meals? It's just too hot to turn on the oven or cook over the stove top. Hit me with your fav summer slow cooker recipes, please!

I should be doing this more. I really heated up the house on Sunday making stromboli, roasted cauliflower, and brownies, all at different times in my oven!

I did make a crockpot French dip sandwich meal the other day. It's pretty good! Google for a simple recipe with roast and a can of beef consomme. Serve on buns with provolone. I added an arugula mix tossed with oo and lemon.

I made crockpot meatloaf for dinner tonight. I used this recipe (which is actually for an oven but worked great with the crockpot). https://www.backtomysouthernroots.co...t-breadcrumbs/ I sort of made a foil bowl and put it on one side of the crockpot, and then cut up some potatoes and carrots and mixed powdered onion soup mix with those and put them in the other half. It's really yummy!

Tonight was crockpot sausage and sauerkraut, roasted potatoes, sautéed apples. Last night was Greek fish, lemon rice and marinated Greek salad. Tomorrow I’m doing jalapeño chicken with peppers, rice, and grilled pineapple.

We tend to do a lot of grilling in the summer. I should do more crock pot recipes -- they mostly just require more planning ahead and that's not my summer strength! LOL.

We grilled burgers last night.
