Tonight was crockpot sausage and sauerkraut, roasted potatoes, sautéed apples. Last night was Greek fish, lemon rice and marinated Greek salad. Tomorrow I’m doing jalapeño chicken with peppers, rice, and grilled pineapple.

Cheese enchiladas, Mexican rice, stuffed jalapenos. The rest of the week will be creole chicken and rice, Mac n cheese, gnocchi with veggies and sausage.

We tend to do a lot of grilling in the summer. I should do more crock pot recipes -- they mostly just require more planning ahead and that's not my summer strength! LOL.
We grilled burgers last night.

Zucchini and green and yellow beans from my dad’s garden, pulled pork from sam’s, and I whipped up a GF mac and cheese because a kiddo was craving it.
