Pork Carnitas are cooking away in the Crockpot. We've got enough produce coming in from the garden to make a nice salad, too.

DH is willing to grill, despite the fact that it's still (!!) raining, so we're having Steak on a Stick (aka Beef Satay). For sides, I have green beans and plenty of Japanese eggplant in the garden that I'll either stir-fry or pan braise. Oooh, maybe Spicy Green Beans. Kids are debating coconut rice vs plain.

Ds 18 is playing in a semi-pro soccer game tonight. Kick off is at 6pm, so we're bringing sandwiches. Might even get to see dd and her dh.
I'm thinking shepherd's pie for tomorrow.

Last night was chicken wings . . . I was going to make Mac n cheese for dd but she had leftover pizza so ate that instead.
Tonight is chicken salad and tuna salad. Trying ot make bigger batches of stuff for leftovers on busy nights. TOnight Ill cook the chicken before both kids have soccer than then mix it all afterwards!

We are in self quarantine for this week (been since Friday). Waiting on results for Margarets Covid test. I made a lb of black beans on Saturday so we've been having meals based around that over the weekend
Friday we had brown rice and black bean taco bowls Saturday- We had black bean with pasta and Alfredo sauce with salad Sunday- Back bean and cheese quesadillas Monday- back bean minestrone soup and bread tomorrow is chickpea pasta with feta and tomatoes and garlic bread (I think have to see if I have any)

So I have ground Italian sausage thawing, but probably won't be fully thawed so will have to crumble it and cook it that way. I have rice, grits, frozen hashbrowns, and some frozen veggies, but no produce to speak of (carrots, celery, lemons, onion, shallots, one tiny romaine heart, small jalapenos in my garden). I have a few kinds of cheese (cheddar, gouda, parmesan, feta). I have various canned goods like tomato products, gf cream soup, a few veggies, chicken broth, olives, beans, pineapple. I have lots of different dried spices and herbs and fresh rosemary in the garden. What would you make with those ingredients? I don't want to to go the store.

I have chicken in the crockpot for chicken tacos tonight. I probably wont have time to do those yummy lentil tacos so will probably just do bean ones.
