The answer for me is definitely Thanksgiving leftovers for a few days. The best part about Thanksgiving weekend is that I pretty much don't cook. The kids just help themselves to the abundance of leftovers.

Turkey sandwiches yesterday. Today I'll sautee the turkey, stuffing and peas with scrambled eggs for burritos. That will be lunch. Tortellini for dinner. We only had 2 thighs, so I'm surprised we had so much left over. But one of them was massive.

We had TG leftovers today for lunch. For dinner we are going to do the lights display walk along the multiuse path. Its really nice. Along the way is the Christkinldmart and we will stop there for dinner.

Last night dh cooked (steak with mac n cheese), I made spaghetti squash. I am really loving squash again this year but my family is more lukewarm about them (less the little yellow ones and zucchini that is always a family favorite). So if anyone has a sure fired squash recipe. I just roast mine upside down but willing to branch out.
Tonight I am making curry ideally. We dont have a lot of leftovers and I drive the boys carpool and dh takes dd to PV practice. I just need to start the second I get home from work! I cant find my rotating meal menu so I think maybe it got thrown away. I need to create another one I guess. Even without the ideas menu, I did meal plan and shop for this entire week so thats usually where I fail. I dont like and generally dont throw away food so pretty good at making it if I can plan and purchase!

My kids actually eat roasted acorn squash. I cut it into half moons, season with cajun seasoning (we always have Tony Chachere's) or something similar, a little evoo and roast at 400 until caramelized and soft.
Tonight we're gone until dinner so I put a ribeye roast in the IP for French Dip sandwiches. I have salad veggies in the fridge, but no bread, so it looks like I have to stop at the grocery store on the way home. Oh joy.

I only did half of each squash. I skipped the sugar. They are sweet enough for my taste on their own. I'm not sure the cream cheese did anything, but I already had it in my house.
