Bell Pepper strips with a ginger/lemon dressing. It's from one of the THM cookbooks. My kids just scarf it up! (And leftovers keep quite well in the fridge.)
---------- Post added at 08:04 PM ---------- Previous post was at 07:55 PM ---------- Dressing: Juice of 3 Lemons 6-inch piece of fresh ginger 1 jalapeno, diced fine 3 cloves garlic 2t ground cumin 1/4 c MCT oil or EVOO 3T ACV 1 1/2 t salt 1 lg bunch cilantro, finely chopped Notes: I rarely use the whole bunch of cilantro, and never the whole jalapeno because my kids just don't do that much heat. I often sub a pinch of crushed red pepper for jalapeno. If you don't have lemons, limes are great and bottled lemon juice works. I've only used the MCT oil a couple of times. EVOO us great and Avocado oil works nicely, too. This is enough dressing for 8-10 large bell peppers, depending on the proportions of dressing to veg you like. It's supposed to keep in the fridge for a week, but honestly, we've never been able to test that as it gets eaten in 2-3 days.

Chicken Jalapeno Popper Soup. (Broccoli on the side, even though the broth has loads of cauliflower blended into it. Littlest might actually eat some broccoli, while she is morally opposed to soup.)

Last night was chicken meatballs with lemon vinaigrette sauce, baked potatoes with whipped feta, sauteed zucchini.
This weekend will be ham and potato chowder.

Ok, this thread forced me to make a plan for dinner for the week. (Which is WHY I'm here, I need this thread, meal plan time is not my super power).
Last night DD and I stopped at a favorite pizza place that is its 1.5 hours south of us! dd and I stopped on our way home from a soccer tourney and I got a whole pizza for the boys plus a large for us 4 leftovers. I told ds to NOt have the kids eat it for lunch (today is their at home hybrid learning day) - I already made them big salads so that with something else and the pizza will be tonight's dinner. (See? I was gone all weekend, I surely can't be expected to make a dinner tonight! That is totally unreasonable for anyone.) THEN I made a menu / grocery list with 4 meals (I always make double bc ds eats a lot but also so we have leftovers). That should be plenty esp since we have meal plans for both meals Saturday already. Fingers crossed ds soccer practice gets canceled 2night due to rain and cold and I can grocery shop rather than drive the carpool. Alternatively, I could try and go BEFORE carpool. I could go afterwards but won't want to. Tomorrow is a track meet so could go before or after as well. Have to figure that out anyway.
