October Dinners
What are you having for dinner? We’d love to know!
Tuesday- sausage, gnocchi, zucchini, peppers, mushroom sauce Wednesday- Cacio e Pepe Thursday- Cheese enchiladas and salad Friday- fast food I’m hosting a family reunion over the weekend! Saturday noon- sandwiches, tomato soup, chips Saturday eve- Taco bar, nacho cheese and chips, cilantro lime black beans, Mexican rice, s’mores Sunday brunch- eggs, sausage, pancakes (gf waffles), cheesy grits, fruit salad, Bloody Mary mocktail, mimosa mocktail, apple juice, coffee, hot tea

Last night was homemade pizza with various toppings.
Tonight was quinoa with roasted squash, sweet potatoes, cauliflower, beets, and zucchini, with a maple tahini dressing.

Sunday: chicken and sour cream enchilada casserole
Monday spaghetti squash with mushrooms and caramelized onion (plain buttered pasta for my squash and mushroom hating husband) Tuesday honey garlic tofu bites over rice with steamed broccoli Tomorrow leftovers Thursday probably rice with peas (risi e bisi) maybe some cooked sausage if I decide to add meat Friday probably salmon patties no sure with what yet.

I'm not feeling well so today it's pizza/pasta dd1 brought home from work.
Tomorrow is a chickpea and veggie soup maybe some rolls if I feel up to making some if not then crackers. Rest of week no particular order charro beans with chorizo Lemon and ricotta Ravioli with sage butter Black bean and sweet potato tacos Meatballs with ciabetta bread Loaded baked potatoes Salmon patties brussel sprouts

I've been using emeals lately to change things up.
Yesterday was crispy pumpkin seed chicken with pear and feta salad. I made lemon rice to go with it. I stuff halved and seeded jalapeños or hatch peppers with a combo of cream cheese, shredded cheddar, salt, pepper, garlic powder, onion powder and top with gf panko and then bake at 400 degrees for about 20 minutes. They are sooo yummy!
My menu this week is based on my farmer’s market purchases. I love the farmer’s market.
