Instant Pot
Ok Heather, you raved about this in another thread. I'm putting you on the spot . . . give us your best vegetarian recipes for the Instant Pot.
I was given this Cuisinart electric pressure cooker. I haven't used it & planned to give it away, but you might change my mind. Is this similar to the Instant Pot, or is it the additional features that make the Instant Pot so awesome? (FWIW, I have an old-school pressure cooker that gets plenty of use.)

I think they are similar. I use it for dry beans, potatoes, and oatmeal quite a bit. Otherwise I dump random stuff in there and turn it on I did get a Vegan Pressure cookbook and what I have tried is successful. Then I got pregnant and everything smells bad.
But, stews, soups, curries all work well in there. And, it does it fast. You can saute on mine so you can onions and stuff then add everything and turn the pressure on. I am horrible about getting dinner down at a responsible time. So, this has made that much easier. My kids love beans so it's been great to whip a batch of beans or Chili. My favorite part is that I can put stuff in and walk away. It will cook it and then go to warm. So, I am not burning things which I do a lot.

It never occurred to me to make whole potatoes in the pressure cooker. Brilliant! I'm sure the size of the potatoes affect cooking time, but approximately how long does it take? And when you give the time, does that include the time it takes to bring the cooker to pressure? We eat curries a lot & I hadn't thought to make them in the PC. Love it! I'll probably stick to my stovetop PC, though. It's what I know & the electric one is Teflon.

Yeah, the instant pot is stainless steel. My mom was going to get one from an infomercial. But, it had that non-stick pot and I suggested she get an Instant pot instead. Then she entered me a link to the shipping for MY instant pot. She is tricky like that
I think potatoes take 10 minutes. I put them in whole or cut them in half if they are big. We usually do Yukon Gold. About a cup of water, then the rack and fill with potatows. They come out like a cross between boiled and Baked. They are perfect. I don't know how long the pressure takes because I just set it an come back when I am hungry. I never wanted a pressure cooker before because I knew I would have to watch it.
