easy, low-dishes dinners
I just cleaned the kitchen. I am tired of washing dishes. I have to make dinner. I am trying to minimize every kind of dish out there- cooking dishes, eating dishes, eating utensils
We are mostly vegan but everyone except me eats mayonnaise and cheese (both of which we do have- cheese is shredded mozzarella and shredded cheddar). We also have- starches- raw potatoes, noodles, rice, whole wheat bread, whole wheat flour, white flour, corn tortillas, flour tortillas, packaged croutons, oyster crackers fresh vegetables- lettuce, spinach, carrots, avocado as well as frozen peas and canned tomato sauce fresh fruit- nothing- I need to go shopping tomorrow! But we have canned peaches, pineapple, and jarred applesauce. condiments- mayo, mustard, pickles, ketchup, BBQ sauce, hot sauces galore, lemon juice, lime juice, peanut butter, jam, probably a bunch of other stuff I can't think of. (rather not make pbj sandwiches, though) I have all the basic spices and baking staples and I have raw cashews. All out of almond milk. I'd just do baked potatoes but it is hot today and I'd rather not heat the oven up that much. Maybe I could do them in the microwave, though. . .

You could make potato tacos. Dice potatoes fairly small (to cook faster) rinse them a few times to remove starch and then cook in a skillet. Season with taco seasonings. Serve on corn tortillas with chopped veggies.

fyi (and really having nothing to do with your question since you've surely figured out dinner in the 5 days since you posted this) I "bake" potatoes in the crockpot, especially when I don't want to heat up the oven. They take 5 hours or so depending on the size.
