Green chicken enchiladas, black beans, cilantro lime rice, salad Sweet & Spicy Hot Chili Chicken Noodles/broccoli Honey Lemon Garlic Salmon & pistachio pesto pasta, asparagus, bread

I’m inspired by you ladies to try Falafals! Embarrassingly I’ve never heard of it before but there is a restaurant in my city that has it so I’m going to get some. I try not to eat meat so I’m excited to have another meat free option.

Falafel is ds21’s favorite dinner. I don’t fry mine. I bake them. Frying takes way too long for as many as I usually make. If you like Mediterranean flavors you will like these.

Yes we love falafel they are pretty simple to make. I just use canned chickpeas (cause I always forget to soak my dry ones) some spices and chickpea flour. I also bake because both less oil and I can do bigger batches easily. So good
Tonight we had/having chicken street tacos. My youngest eats early around 3 because she does rehearsal from 5-9 and doesn't like heavy meals right before. Nor want a bunch of food right after.

Can’t believe it’s another week! Went to the farmer’s market on Saturday so I’m excited to use what I bought.
Monday-ratatouille risotto, arugula salad, cantaloupe Tuesday- lemon basil thyme goat cheese and mushroom spaghetti squash with chicken, arugula salad Wednesday-meatloaf, baked potatoes with whipped feta, green beans, marinated cucumbers Thursday-frozen dinner/canned soup after dental anesthesia Friday-Mac n cheese with hatch chili cheese Weekend- homemade gf pizza

Everyone's either sick recovering or fighting off something new. I have some chicken ginger and tumeric soup in the crock pot. Going to add noodles to bulk it up but otherwise that's dinner tonight.

We had Aldi's pizza and their pumpkin spice cookies last night. Not bad for $7 pizza. We add our own toppings.
