For those who don't want to/can't buy the imitation stuff, there's a lot you can do. We live in China, so we couldn't get a boca burger even if we wanted one.
What I do is make things ahead of time and freeze them for quick meals. I make vegetable patties for "burgers" and freeze them. Most nights we do a variation of veggies and rice or soup. Finding vegetable combinations that knock your socks off is key to a great meal even if you can't find the imitation things. Red onions, tomatoes, and garlic are great together. Brown mushrooms, bok choy, and red bell peppers are great (especially over cous cous). Broccoli, Cauliflower, and other root vegetables with an orange juice, syrup, and cayenne pepper blend is awesome! Grains: Quinoa Brown Rice Spaghetti Mostaciolli Farfalle Wild Rice Israeli Cous Cous Regular Cous Cous Whole Wheat Bread White Bread (from the bakery because I found one that doesn't use dairy/eggs) English Muffin Bread that I make Cereal Oatmeal Muesli Wheetbix type cereal noodles (we like soba-style or thin noodles to pop in soup) Veggies (these are our staple vegetables. We get fresh ones daily from the market behind our house and get more if we're in the mood for something different): brown mushrooms White mushrooms Oyster mushrooms Porcini mushrooms Baby bella mushrooms (Mushrooms are a veggies good friend!) carrots potatoes garlic onions and shallots (these are actually in the pantry with the potatoes. red, white, and yellow onions and red shallots) red, orange, yellow and green bell peppers broccoli cauliflower bok choy tomatoes leeks (You must make friends with leeks. They are the most delicious, delicate flavor! I promise) green onions Misc Fridge: Milk (soy, rice or almond, depends on the mood) Jams Soy Sauce Rice Vinegar Hot Sauce Tomato Sauce OJ Misc. Pantry: Vegetable Broth Teas Soups (I usually make them from scratch though) Syrup Spices Beans galore (cannellini, black, red kidney, you name it, i love it) Boxes of curry for quick meals
