Re: Baking, Egg Replacers
I'm slowly making the change over to a veggie style life (DH refuses) and while as of now not going fully vegan I still like to find alternitives especially for my DD who does better with out dairy and eggs.
Plus if I'm ever blessed in haviing a vegan GCMer over I can respectfully be able to cook for them Deanna

Here is a cookie recipe with a picture of a flax seed mixture. I thought that was really helpful.

Re: Baking, Egg Replacers
I found a year ago that I'm allegic to eggs (among other things)..I have experimented with alot of replacement methods. For cookie & cornbread recipes, I use 1 tsp cornstarch mixed with 1/4 c. applesauce per egg...
I also bought "Bakin Without Eggs"..it has a few better for you versions of comfort foods (like banana bread) too |

Re: Baking, Egg Replacers
It's interesting how many possibilities there are!
Here's a list I together in the past: Egg Substitutes As a binder, you can substitute one of the following for each egg. . . 1. 1/4 cup (2 ounces) soft tofu blended with the liquid ingredients of the recipe 2. 1 small mashed banana 3. 1/4 cup applesauce 4. 2 tablespoons cornstarch or arrowroot powder 5. Ener-G Egg Replacer or another commercial mix found in health food stores
