Healthy suggestions please!
We are trying to cook meals more meals in the crockpot for 2013 but would love for them to be healthy... And a lot of what I keep finding online for crocker dishes aren't. Any suggestions? Or suggestions of resources?

Have you looked at Crockpot365? She has some good healthy stuff and some not so healthy stuff.

If you have a kindle there are always tons of free cookbooks with slow cooker recipes - I know I probably have close to 15-20 of them

I just put 3 chicken breasts and some bbq sauce in the crock. It will be served with either rice or whole grain rolls. You could also do with taco sauce.
I also do a whole roasted chicken in there. Stuff bird with quartered lemon, garlic, salt, olive oil, pepper. Line bottom of crock with sliced onion. drizzle/rub some olive oil and salt on outside of bird too. Cook on low until done. Those are my go to, super fast & easy crock pot meals.

Fresh From the Vegetarian Slow Cooker by Robin Robertson is an excellent book. I realize you're not vegetarian, but I thought I'd mention it in case you were looking for recipes for veggies that are not overcooked & smoothered in cream of whatever soup.

We try to be mostly plant based in our diet, but are not opposed to some of the healthier meats out there if it is a great recipe

I tried this recipe this week, and we really liked it.

I used two cups of the navy beans and half the can of tomatoes (so one smaller can). I'd suggest cutting the salt in half too, though I left the other ingredients the same. |
