I'm making Chinese Rice Paper Wrapped Fish tonight with Tilapia. Fingers crossed they'll eat it! My kids don't really like lettuces (except for cabbage, go figure) but they'll eat chopped salads made from all the other typical salad veggies, so I've got a cucumber-sesame salad and a pepper salad with lemon ginger dressing on the side.

I tossed a frozen lasagna in the oven as soon as I got home from picking up Margaret at school. Then dh showed up and said he'd not have time to eat.. so now I have a meal that my youngest can't have and my husband won't be around to eat.
It didn't require any work from me but I still hate "wasting" a meal like this. I know I'll just store the leftovers but ugh .

I do! It's my sister's recipe. I'll type it up as is. Green Pepper Soup 1 lb ground beef 1 lb beans 2.5 c. tomato juice 1 qt stewed tomatoes 4 c. beef broth mushrooms 2 c. green peppers 1/4 c. brown sugar 1 tsp garlic powder 1 tsp onion powder 2 tsp salt 1/2 tsp pepper _____________________________ I omitted the beans (no reason, just didn't feel like beans), omitted the sugar (I always omit or at least dramatically cut sugar). Measured nothing so I have no clue on the accuracy of measurements. Also because it's tomato season and I have an abundance of tomatoes, I just pureed a bunch of tomatoes and used that as the base alone with some bone broth. Served over rice.
