Yesterday was pesto gnocchi with sun-dried tomatoes and asparagus.

Not sure about tonight it will just be me and the girls dh being fed at work this evening. Plus I have one working till at least 4 and another that has ballet at 5 so my window is very limited.

Last night was yucky fish, crispy potatoes, spinach, Caesar salad, and biscuits. Tonight I'm planning chicken enchiladas, cilantro lime black beans, and stuffed jalapenos.

Thursday, we are doing an impromptu Italian dinner night and I’m serving spaghetti and meatballs, fettuccine Alfredo, tossed salad with homemade ranch and whatever the other guests bring.

That sounds fun!

We are on a ‘keep things as simple as possible’ stretch. So last night was pesto pasta, tonight Costco pizza.

Sunday will be our last all-family dinner before DD 19 heads across the country for college. We’re making Greek burgers. We’ll also have ice cream for DD22 for her birthday. It’s going to be a bittersweet evening.

Charla I am always super impressed at your menu! Are you cooking for just you and your husband all these fancy meals?

That's one area I haven't done so well at as my family has grown and some started moving out. I found it easier to plan and cook nice meals when I was feeding the family of 6. I still have two at home, but with busy schedules dinners are often for just a few of us... And I find it hard to be motivated to actually meal plan. More often than not I just think of a few last minute options and ask the participants to choose. I should get back in the routine of meal planning some nicer meals. I typically make sure I have some sort of meat thawed in the fridge and that's the extent of it.

Tonight I'm making burgers. Because I have ground beef. Buttered carrots and cabbage salad on the side.

Greek burgers are ground turkey mixed with spices and minced green olives. Dh does all the mixing so I’m not sure what spices. Cinnamon and nutmeg at least. Serve them on pita with cucumber, feta and sour cream. It is a family favorite.

Definitely a time of big changes in our home.

Probably even more I love recipes!!! But I lose my spark every now and again, too, and it feels like drudgery to cook. I’ve streamlined my meanly quite a bit for the two of us from what I used to cook.

My meal plan this week is super easy.

It was just me the last two evenings so last night I had leftover meatloaf and cauliflower rice and tonight I had leftover pasta from lunch.

Tomorrow night: sausage, peppers, roasted baby potatoes and I’m debating about adding sauerkraut.
Thursday: Mac n cheese
Friday: beef gnocchi, salad
Saturday/Sunday: crockpot beef with onions and mushrooms over rice, green beans

I have tomatoes from the garden so want to do blts. I’ll see when I might sneak that in. Maybe lunch one of those days.
