I love BBQ'd vegies too! Favourites are zucchini (do you call them courgettes there?) and potatoes. With the potatoes, par-cook them (steam is best), then toss in a bit of olive oil and scrunched/ripped up herbs - rosemary is my favourite - let them sit (covered) for an hour if you have time, then BBQ briefly just to give them that chargrilled flavour (and finish cooking them through of course).

I love zucchini and peppers, cut into chunks and tossed with a bit of olive oil and balsamic vinegar. I have a bbq wok, which is great for those and roasting potatoes too.

BBQ corn on the cob is always tasty, too. Take off the outer husks and silk and grill away! Shishkebobs would be an easy to make vegetarian, too.

My mom makes fajitas on the grill. She marinates all the veggies and cooks them in a grill basket. Really delicious.
If you make kabobs and put barbecue sauce on them they taste so good. I think there was a bbq episode on Compassionate Cooks.

Grilled portabello mushrooms
I have this one recipe that is big "steaks" of eggplant, marinated it a bunch of yummy stuff, made into "sandwiches" with goat cheese in the middle and a tooth pick stuck through to hold it together and then grilled. Sooo good.

We love to grill! We do a lot of kabobs, corn, and the veggies mentioned above. We also LOVE grilled pineapple. We also grill veggie burgers. Ooh, and asparagus is good too!
Now I'm hungry.

cut golden apples in halves and place them cut side down. brush with honey and rum... just cannot be any better: the bottom will caramelize and inside is all soft and mushy
also, we wrap cooked quinoa or orzo/cus-cus into a large collar green leaf (for the lack of banana leaf ) with some veg and whatever sauce and let that steam on there... so good. makes a side for whatever you are eating. all of this is making me very hungry. thank you , ladies, some great ideas here.

Of course I read this thing in January. I could cry for the lack of grilled eggplant.
My DH made these kabobs to die for... red onion, portabello, eggplant (if you've never grilled eggplant, you must!), garlic and red bell pepper. Marinated them a little in a red wine/teriyaki sauce and they were possibly the best thing I have ever had. Just remember to soak your wooden skewers well before putting them over flame. When I get muttered at tongiht for making DH fire up the grill, it is all your fault. Yours, d'you hear?!
