Pressure canning chicken
Has anyone done this? I ordered extra chicken from Zaycon and am thinking this might be a good option. I'd like to do pint jars with cubed chicken breast.

If you go on youtube, there is a snowpony (user) shows how she canned chicken cubes in pint jars. I have done this many times the same way and it has been great. (I make sure to clip all of the fatty parts off so it is lean meat and doesn't spoil as fast as the fat would...............it will cook about 1/2 cup of broth without you adding any water. I save that when I open the jars and use it to cook in with my rice. YUM!)

I've done it. Very easy. We did raw pack with no extra water, but it did need salt.

I raw packed, no added water needed. The texture is just like regular canned chicken. Quite different than baked or pan fried but it's great in recipes.

I need to watch the video. In the mean time, I'm asking questions here. How tight do you pack it? Would quart jars work too?

Have you pressure canned before? You can can chicken in quarts. Here is a link for times and pressure

I cut mine up in cubes like 1 or 1 1/2 inch squares............I just eyeballed it, not a tape measure. LOL It is much better to use the widemouth jars. You put the meat in the jar raw, then use a butter knife or spatula that is slender and pack the chicken somewhat with the end goal of removing the air. I went just to the neck starting and added 1 tsp of sea salt on top. I wiped the jar rim clean and then dry wiped. I turned the rims to just tight and placed in the pressure canner. It cooks it's own juice.

Just remember not to open the canner or remove the weight before it cools enough to open or else it will draw it out of the jars. The jars will be boiling, so make sure the littles are not underfoot when you need to place it on the counter to cool. |
