Vegan, gf, sf, eggplant ideas?

I have seven large eggplants to use. I'm thinking babaganoush (sp?) We're burnt out on ratatouille.

I'd love to do an eggplant parmesan with maybe nut cheese? I have gf bread crumbs.

Maybe something Indian?

Moussaka ? I just chose that recipe at random, but there are others when you search "vegan moussaka."

I layered thin slices of eggplant in a lasagne a few days ago (along with zucchini and in place of noodles) and liked it. I just layered those with sauce and you could use vegan cheese shreds.

You could slice thick, dip in something like almond milk, bread, and pan fry.

Lasagna might be good. I'm making a huge batch of tomato sauce for the first time ever as we speak.

Oh that does look yummy! I think I have everything but the artichoke and olives, bet I could leave those out...

IMO, the artichoke & olives take it from 'meh' to 'oh my gosh, that is so good!'
