I have a chicken in the crock pot. We’ll have rice bowls with Mexican style toppings, and I’ll have lots of chicken left for other meals this week.

I can relate to the picky eating thing, ViolaMum. i have verying levels of picky eaters, so I am basically a line chef. Frustrating. My husband and 7 year old ate chicken nuggets and french fries yesterday (fairly typical). My 10 year old has been on a taco kick lately. The olders ate a soup called Salaw m'chew (sweet and sour soup. it is yellow from tumeric).

Tonight is stuffed peppers. I am not sure what to serve with it. Ideas? There is rice in the peppers. Maybe green beans and garlic bread, but we are having sandwiches for lunch and I don't like people eating bread twice in a day.

Thursday is pork tenderloin, potatoes and Brussel sprouts.

If you don't want to make bread, would your family eat a salad? (I see you've got it on the menu for tomorrow.) I'm assuming the peppers are stuffed with meat and rice, so a veg or even two would be a good accompaniment.

I'm putting a coconut curry in the crock pot for tonight. Maybe rice on the side.

It's going to be a lot of easy meals as we have too much going on this week.

My daughter asked if they were really potatoes and not mashed cauliflower.

I said: it's mashed potato

I put one potato in with one cauliflower.

I don't think I lied.

I think tonight will be soup and then I don't have to think about meals untill wendsday. Because I am going to go visit my brother who is an amazing chef and dh is going to deal with meals I have stalked the house with all of the freezer junky food that we can eat for him.
