I used to make cabbage flats. Basically cabbage rolls but in casserole form to make it easier for me.
They fell off my list and haven't made them in awhile. I wonder if there is a vegetarian of the same concept bc thats how things are done now in my carnivore/vegetarian home.

It's just the littles and me for the rest of the week. One asked for sausage, so we're having sausages with peppers and onions tonight.

I made a creamy tumeric chicken for dinner tonight. sort of a made up recipe loosely based on several googled "legit" recipes.
Seasoned and browned boneless skinless chicken thighs. Removed. Added onions, garlic, mushrooms. Added flour and chicken broth to thicken. Put the thighs back in and let it simmer. Added lots of spices (heavy tumeric) and then coconut milk and served over rice. Delicious.

We had pork carnitas, rice, homemade refried beans, and something I call relish.
PORK CARNITAS (MEXICAN SLOW COOKER PULLED PORK) INGREDIENTS · 2 lb pork shoulder (pork butt), skinless, boneless (I used pork mini roast) · 1/2 onion, chopped · 1/2 jalapeno, deseeded, chopped · 1 tsp salt · 1/4 tsp black pepper (I skip) · 2 cloves garlic, minced · 1 oranges, juice only (or sub with 3 oz orange juice) · 1/2 tbsp dried oregano · 1 tsp ground cumin Relish Chop up whatever veggies you have (tomatoes, cukes, bell peppers, red or yellow onions, cilantro, scallions), add some ACV and olive oil with salt.
