October Meals
I'm thinking of having mini meatloaves, potatoes, and green beans all baked in one pan in the oven.

I love all the carby comfort food this time of year! I made two kinds of enchiladas (refried beans with red sauce, black bean with green sauce), rice, pico de gallo, and shredded lettuce. That sounds like a ton of work but honestly most everything came from a can- red enchilada sauce (which I mixed with my homemade yum sauce), green chilis (also mixed with yum sauce), canned refried beans, canned black beans, purchased corn tortillas.

Last night was Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce with a green salad. I had splurged on two really yummy loaves of bread and they both had mold on them already....so sad. I should have put them in the fridge!

I wish my kids would eat soup! It's cold and rainy today - perfect soup weather.
It's going to be an oven dinner tonight: slow-roasted chicken, roasted squashes, and probably kale, too. A friend gave me 4 little Honeynut Squashes from her garden that I can't wait to try. They look like mini Butternut squash but are a dark mahogany brown color and she says super sweet. We have a couple of acorn squash that I will cut in half moons and toss on a sheet pan with some spices. My kids eat it with their fingers like a watermelon slice.

Early bird just started really eating soup. Last night she ate two.bowls. wiggle worm in the past has eaten soup but just picked out the little bits of sausage lastnight.

Monday was meatball subs.
Tomorrow is taco bar at club. Friday is homemade pizza night by request. Haven’t made that in ages! Saturday is a debate tournament, so probably take out teriyaki. Sunday I’m not sure. Maybe stuffed zucchini. Sent from my iPhone using Tapatalk

The meatloaf was good but the potatoes never softened up. Not enjoyable at all. Don’t know if it was the potatoes or the cooking method.
Tonight is Casio e Pepe and salad.

How did you cook them? Was it on a sheet pan? And did you put anything on them? Potatoes can be tricky. I love the idea of scalloped potatoes and layered veggie tian, but it rarely turns out with the recipe as written.

I peeled the russets and put them whole around the meat loaves, but I’m wondering if they dried out and needed some oil or broth or leave the skins on or something. I baked them at 350 degrees for one hour and 20 minutes.
