fresh coconut drink?

I just cracked a fresh coconut and have about 2 cups of coconut water and a big pile of meat. I was thinking about using half to make fresh coconut milk/flour. And the other half to make something yummy? I don't drink alcohol, DH does, so rum optional

. The island that we honeymooned on made some sort of fabulous cocnut drink with fresh coconut but we didn't get the recipe. And ideas?
