Thank YOU! It was your thread that got me off my duff in search of new recipes! I felt like I struck oil when I discovered that Freezer to Instant Pot cookbook because, despite my best intentions, I frequently forget to defrost things the night before.

We need to eat leftovers for dinner tonight - the fridge is full and we're leaving for the beach tonight - but my tribe is just not into leftovers.

Tonight is rissoles, potato bake and steamed veggies.

As we are still under stay-at-home orders for at least the next few weeks, I'm going to try a few new recipes that I have to try to do something different to break up the monotony. So I might be asking a few of you for some of your yummy recipes

Today I made fish cakes (salmon, white fish, parsley, potatoes, tartar sauce) fried in some olive oil. Along with peppers stuffed with spicy lentils.

We were out of town and I need to go shopping, so a pantry/freezer meal was in order. I made Grub - ground beef, riced cauliflower, frozen peas, peppers, and onions, creole seasoning, smoked paprika, and coconut milk.

This is kind of what I made. Ground venison, onions, red bell pepper, canned tomatoes, black beans, chili powder, paprika and other seasonings, and rice.

What cookbooks did you get? Any that you would recommend?

Are you making the Beef Bourguignon in the IP? That sounds really good. We're having Beef Barbacoa in the IP because it's hot outside, I don't want to turn on the oven, and every single protein I have is frozen.

(I cannot, for the life of me, remember to regularly defrost meat in time for a meal. I get myself in this position far too often!)

I thought I had stew meat in the freezer. I was wrong

I ended up making shepherd’s pie tonight and I’ll do the Beef bourguignon on Friday. Going kayaking and to an all ages track meet tomorrow. That means sandwiches for dinner.
