Sauteed peppers as a side veggie

We usually eat red, yellow, orange and green peppers cut in strips by themselves raw as a side dish. I usually have a lot left over. Last night I decided that I would take the red, yellow and green peppers that I had on sale and saute them in olive oil as a side dish veggie. It was fabulous with only a little dab leftover.

I adore peppers prepared that way.

I toss them with some olive oil and balsamic, and bbq them.

I have never thought of bell peppers as a cooked side dish. If I have cooked them they have been a part of a recipe, not ever by themselves. I love them. I could eat them all day. They are going to be on my menu more often especially when they are on sale.

Bbq'd peppers sound absolutely heavenly.

I usually roast them but will have to try sautéing them!
