My mom makes a REALLY good salad with it. Vinegar, olive oil, lemon juice, cayenne pepper, and sunflower seeds.

If you don't like cooked greens plain, you can also use kale in other dishes you might normally put spinach in---like eggs (omelets, quiche, etc.), spaghetti sauce, pasta w/ veggies, etc.---as just an additional veggie rather than solo. Just remove the stem and tear into bite-sized pieces and throw it in. :) I'll add another vote for kale chips too. :yes

I vote for kale chips too. I puree soaked cashews with garlic and salt, and then rub that mixture into the kale before I dehydrate it. It comes out tasting like cheese.......so SOOOOOO good! If I had it available all the time, that's probably the only snack I'd need for my kids. They love them!
