Default I found this great recipe for Banana Bread (Vegan)

I love Vegweb.com. I used this recipe last night. I made three loaves. The first with all the sugar, the second with 1 cup sugar, a whopping cup of bananas and 1/2 cup frozen mango thawed in the micro and sprinkled some walnuts on top, a batch of mini-muffins with one banana and a cup of blueberries and only 1/2 cup sugar.

My bananas were really ripe and they were all great. What a versitle recipe. OH and I used whole wheat flour, too. A mixed gently with a spatula and they were all very light and yummy. A good dark bread and not cakey at all.

I that site!!! We're not veggies but we have lots of friends that are - its a great resource!

I used http://vegweb.com/recipes/bread/2272.shtml recipe with 1/2 whole wheat - 1/2 AP flour

Really easy & no eggs or egg subsitutes and you can use ALL the rotten bananas!
There's no fat in the recipe so be sure not to over stir.
